The templates can be set in yaml checkout some of the yaml examples of the builtin templates http://www.phpdoctrine.org/documentation/manual/1_0?one-page#class-templates:core-templates and you can always create your own. I personally think they are more powerful than plugins with behaviors because this is built into the orm. Symfony I believe adds the behaviors to propel, I don't think it is native, though I could be wrong on this.
Your point about most plugins needing a doctrine version is correct but some already do as in sfGuard and sfGuardDoctrine.
