Most of your problems stem from the fact that your hosting provider doesn't allow certain config directives needed for symfony. So just find a provider that does. I use cheap virtual servers but they do require you know how to setup and maintain a Linux server but that might not be appropriate for you. You'll have to do some research and find something you can manage.
