Look at the block of PHP code just before the subheading "Form Events". There you'll find that they set the "with_delete" option to false – set this to true and add the "filename_delete" validator with an sfValidatorPass class (you can look that up here: http://www.symfony-project.org/api/1_4/sfWidgetFormInputFileEditable#method_configure).
