Damon and Tim, you are right about the : syntax, it does work. I was 
probably confused by too many other things that didn't work in that code.

The updated example for the orm overview:

http://docs.symfony-reloaded.org/master/guides/doctrine/orm/overview.html

Uses find() instead and the syntax looks reasonable.

But this updated page:

http://docs.symfony-reloaded.org/master/guides/doctrine/orm/form.html

Still has examples that don't really show you what EntityToIDTransformer and 
CollectionToChoiceTransformer actually do for you. It shows how to set them 
up and then never demonstrates any benefit from having them there or how you 
get the data out. I think I can figure that out, but I wanted to provide 
some constructive criticism on the docs before I am "too good" with Symfony 
2 to really see the flaws in the docs (:
