I might be mistking, but isn't the 500 occuring because of the uncaught 
exception? In that case, you would simply need to catch the exception and 
than make sure the 403 error page is shown. 
On the other hand, there should be a way to decide which page is shown when 
the user doesn't have access to a page (at least when you're using the 
Security-Bundle provided by symfony2).
