factor_terms was written for such purposes as this; to give a non-destructive simplification of exressions. In fact, it works in this case:

factor_terms(integrate(exp(-x**2 + 2*x - 1), (x, -oo, oo)))
sqrt(pi)

I would suggest using that at the end of the integrate routine.
