I've not heard of this before. Where are the events stored, i.e. which
server?

I can say for sure that SyncEvolution strictly separates calendar and
contact synchronization: the SyncEvolution code dealing with events does
not know anything about "the contacts of the event owner" (or any
contacts at all) and therefore cannot break an event in the way that you
described.
