Unfortunately, even the commercial products are just huge wrappers around jumpstart, kickstart, nim, etc. With things like Opsware and Bladelogic for example, they handle multiple OS's, but use the underlining install system for the target OS and just create fancy wrappers. As such, any customization still requires know-how for the target OS. And once you start throwing hypervisors into the mix, well the options dry up quickly.
If the targets are all virtual machines, you could create generic images for your target OS's and focus on server/app config automation.
