Yes, this is supported via MTU=. This needs documentation indeed.

Hmm.  I've just tried both MTU and MTUBytes with no effect.  E.g.:

  [Match]
  Name=eno1

  [Network]
  Address=172.31.250.1/24
  Gateway=172.31.250.254
  DNS=172.31.250.254
  MTUBytes=5000

(Unless this requires something later than systemd 216 on Fedora 21.)
