Well... that could be a solution to exchange email if the mail servers were configured with a lot of care and only communicated using encrypted and authenticated protocols. But that sounds pretty complicate to setup for the average users. There is a project called Freedom Box which is working on similar assumptions than yours: build a system that is very easy to use so that average users can host themselves their email, chatting, and social media applications and more. But they are still working on a proof-of-concept: https://freedomboxfoundation.org/learn/ For the time being, the best way of exchanging encrypted and authenticated emails without risking MitM attacks is to learn how to using OpenPGP.
