We would need some more information since many things could be causing this. 
I've had similar issues in the past... If you don't mind I have a few questions 
for you to see if I can help you obtain a viable way to run tails!
1) I'm assuming your using a laptop (not a PC), does your computer have an 
operating system on it (i.e. Windows,Ubuntu,etc) that runs normally without 
this problem?
2) If you are booting from a USB thumb drive, have you tried burning the tails 
ISO to a blank cd/DVD disc and running tails from that instead of a USB?
3) are you connecting to the Internet wirelessly or through Ethernet cable?
4) did you download and verify the tails iso from a trusted source?

My suggestions going in blind would be to first try to burn the iso and run 
from a blank cd or DVD rom disk. Second - if your computer will make it this 
far -I would use 'Tails Installer' to create a second, fresh, and safe USB 
drive that you can use persistence with and all the extras. 
Linux (even gnome) is extremely light as is and can run on ancient systems. So 
I don't think it's the desktop environment.

If your computer is running hot and freezing with the operating system that you 
have installed on your HDD or an alternative live distro (like damn small Linux 
or puppy) then it would obviously be a hardware issue (that's where my money 
is!)
If you would like a secure copy on cd rom or USB flash drive mailed to you I 
would be happy to give you one for free made with tails installer from inside 
tails. 
Worst case scenario, I believe it's best to have a dedicated computer just for 
your sensitive work or to run tails. Considering no hard drive is needed and it 
can be a 15 year old computer and still run tails fine.. You can buy a 
dedicated machine off of eBay or Craigslist for extremely cheap. Let us know 
how it goes!
