nwastra, Great question! I'm not sure about the best answer though, as it doesn't seem to be an issue that has come up before on the wiki or on http://help.openstreetmap.org.
I would suggest you have two options: 1) Ask on http://help.openstreetmap.org, and see if you get anything useful. It would be a great question to ask, as I'm sure other people come across similar circumstances, and getting an answer somewhere public would be good. 2) Make up a tag so that the information is in the database, and if someone comes up with a better tagging scheme, they can change it later. 3) Do both. For (2), I reckon contact:postal='PO Box 2323, Blahtown' would make sense in the context of the other contact:* tags.
