I hit the same problem but, after some research, I found that removing
the cookies for bing from the browser and then reloading the page (CTRL,
Shirt, in my case) meant that the OS option reappeared. Firefox on Linus
Mint in my case.

The url to set the layer ended in &sty=s,but now converts to 'r' (roads).
