Kelly,

Have you checked to be certain Windows Update is completely up to date?  Also, 
is there any chance that your virus 
scanner and/or your malware scanner are set to run scans more often than 
necessary?  How long does your machine 
stay booted up before you shut down?  If the virus scans never complete, they 
may be starting up each time that 
your computer starts, and scans like that do affect resources even though they 
are certainly needed sometime.  
Also, do you have any automatic or scheduled disk defragmenting scheduled?  You 
mentioned iTunes Helper.  Do you 
have iTunes Match, and could it be uploading a large music library to match?

If you are fairly certain you don't have a virus or malware of some kind, you 
might consider letting the computer 
run overnight in case any of the above are running and don't ever finish.  It 
is hard for me to imagine that 
disabling some of the things you are considering are going to make much of a 
difference, so I wonder if something 
is running in the background that is taking resources.
