I haven't had occasion to *map* them as such, but I've certainly seen them (e.g. Lambourn in Berkshire). When I've seen them they're not alongside roads, but circular horse tracks in fields. If they're like that, I don't think they should be bridleway, that would make things very confusing. highway=gallops?
