Let it be noted that this was a really, really stupid thing to do.  
After compounding this error with a few others, I managed to make my  
computer completely nonfunctional, which provided an interesting new  
learning experience, to put it mildly.

Apparently the only way to reverse a Java update on a Mac is to do a  
fresh OS installation, and then apply all of the updates except for  
the most recent one. Fortunately the fix is relatively minor and just  
requires some time, and an OS install disk.
