In my DH> header pane I see a field "Subject". But I don't find it in the DH> View menu. Correct. Now press Alt-F12. You get the Shortcut editor. Now navigate to Main Menu | View | Headers and assign a key to "Matter". Now you can turn on/off the subject header view without having the menu.
