Quin, It depends on how much of the original msg must be persevered but you could use "redirect" also know as alternate forward. It will send the msg to an other email account of yours (does not have to be a "real" account as long as you use local delivery) but before you press the send button you can eddit the subject (or anything else for that matter) Even better would be to use forward with a specific custom template. This way you could possible automate the subject change.
