Past experience has taught me that leaving it up to a vote can be problematic for students. I once gave students in a summer course the option of having a 100 q/1pt each or a 50 q/2 pt each exam. It was such a close vote that those who "lost" let me know in their evaluations and even those on the "winning" side commented that they'd prefer dictatorship to democracy.
 
It seems like the dice option would take away the student conflict of winning/losing, but I will wager that some students who did well the week it didn't get collected and poorly the week it did will harbor resentment (after all, that would be your fault, not theirs).
