Setup another mail for info@ then add that mailbox to the user's outlook
through email accounts, they can see both mail's when they go into the
info@ mail they can hit reply and it looks like replying from info@ they
also have the option to send as themselves...

That is what I do with a  few accounts connected to my outlook.

The user uses Outlook 2007 to connect to Exchange 2003.

I think an alias would deliver the mail into user@ mailbox but then the
reply would
look like it was from user@ not i...@.

Or, I'd have to set up a POP3 or IMAP account and have the user 
select the reply from user from the drop down?
