I have known people like that, and other than the courts there is no recourse for the most part.
When those folks are found, it is often to late (as in this case). It sounds like there were no backups? The old 3-2-1 of backups rule still works (3 copies, on 2 different kinds of media, 1 copy offsite [and I would add, 1 offline]).
