It's pretty trivial for WAFL (NetApp) and ZFS, you can just take snapshots and send the deltas to a different machine via snapmirror or zfs send/receive.. But otherwise it depends on the platform. You'd need a way to track fs writes, preferably by path (as opposed to fs block, etc,) which may or may not exist per platform.
