For example, we have a pre-script that runs and filters out user's home directories that are over a certain size. I've also heard a fair amount about LBackup on some of the mac admin lists: http://www.lbackup.org/ Probably worth checking out as well, since it's a stand-alone solution that's probably a little easier to get up and running (not totally sure -- I haven't personally tried it).
