Instead of playing with OCR, why not just extract the date and time from the EXIF data in the JPEG using exiftool <https://exiftool.org/> or a similar utility? The Bushnell camera traps apparently don't encode the other date like the temperature in the EXIF, but other manufacturers like Reconyx <https://exiftool.org/TagNames/Reconyx.html> do.
