Hi Tommy Joe, I like the idea but have some concerns, or a concern. It would seem that the dish is 90% fish, which if we know that fish is expensive means that each portion is going to be small to cover 100+ people. Is there any way you can add a filler (like the original tamale idea which had cornmeal in it) or will you be wanting to rely on the sides to provide that?
