If you look on that page, and scroll down to " Code to make full colour 
symbols", you will see the nature of the code and Layout I wrote.
I forget whether colour_water_bg and colour_block_bg etc are built in 
variables, or custom variables that Dave and I used to compliment the  built in 
symbol-color statement.  The later I expect.

As Martin suggested, perusing the files in the mpost folder should help with 
deciphering.
