So without actually trying that, is it possible to have multiple script systems 
(beyond the 5 <ss> <it> etc variations) in play at once? ie the latin/roman I 
am typing this message in and Hindi script system? लघु

And if so, how do we choose which is in use, or switch script system 
mid-string, since Hindi is not a language Therion has ‘built in’, so presumably 
<lang:hi> might not work?

It should work if you set up ttf/otf fonts  covering Hindi in therion.ini using 
"pdf-fonts" keyword.

It may be written in the documentation, but regarding fonts I’m naïve and 
inexperienced :)

I want to write लघु (ie laghu, means small in Hindi) in a map header along with 
some English text.

My backup strategy is to include a bitmap as a map-image.
