I've got a crap load of apps. I use to have more but I was running out of
space so I went on a Android app diet. I use a really good tool called
AppBrain to manage my apps, you can find my list here (before the diet):

Some useful apps I use frequently is the Barcode Scanner, Evernote, Google
Maps (of course. I use it more than calling 411 to find businesses and
such to call), NewsRob to read the RSS feeds I subscribe to, Ringdroid to
make my own ringtones, SwitFTP FTP Server to copy files (I use this over
connecting via USB), and Twitter.
But truthfully, the app I use the most, seriously, is the TeslaLED
Flashlight that turns the flash on your camera into an LED flashlight.
Note that all of the apps I have installed are free. I have yet to pay for
an app or game as, so far, I have not found a need to pay for one.
However, I can see paying for Angry Birds once it comes out of beta. I'm
not joking when I say do NOT install the game Angry Birds. It is super
addictive...and loads of fun.
