The x-.. means it is non-standard. Applications can specify mimetypes for a file under the directory /usr/share/mime/packages and also /usr/local/share/mime/packages.
For example dcraw (on some systems) installs dcraw.xml which changes the mimetype of all the files it can process to image/x-dcraw. Thunar-thumbnailers changes files it can thumbnail (with dcraw) to image/x-sony-arw and so on...
