I'd recommend that fiber-optic transmission should be used where it has definite advantages, such as long distance, for galvanic isolation, or in serious EMC situations. It's fun to experiment with for all kinds of things, but it has no advantage over traditional wiring/cable for signal routing in a lab with "normal" operating and distance requirements.

I don't see much point (other than the fun of fooling around with it) in the added complexity, versus the usual, simple, cabling that gets the job done. Also remember, you pay a noise penalty in the conversion of electrical signals to light and back.
