If you don't want to annotate your animations, gtk-recordMyDesktop is one of 
the best tool to create screencasts on Gnome desktop. Here are some of my 
favourite tools...

         
gtk-recordMyDesktop - desktop session recording.
         
FFmpeg - convert ogg video produced by above app to avi or other suitable 
format for Avidemux.
         
Avidemux - Edit your video, add voice, add banners etc.
         
Gnome Subtitle Editor - subtitle your video.
         
HandBrake or FFmpeg - produce high quality h264 video.

Give them a try, though requires some learning curve but great open source 
tools...
