In the installation of your chart of accounts these values can be added. If this is the case, you can check via Menu -> Administration -> Configuration -> Properties -> Default properties. Check if the following field have a value: property_stock_account_output property_stock_account_input property_stock_account_output_categ property_stock_account_input_categ If not, you can assign them here. These valleus will act as default values, even if you don't specify them on the product itself! The values on the productform are used (only) to overrride the default value. With general ledger account you may assign here, is up to you (or your country administration if they force a schema) as long as you choose a balance account, due to the fact that you register value for your goods stored inhouse
