v6 is already in pretty good shape for specialized integrators ready to get 
their hand dirty and if production is for more than say 2 months from now.

In relation of the deadline + scope, looks OK for you. In my opinion it will 
depend on your coding skills + open source culture. Indeed, there will be bugs 
you'll need to deal with (there will be blockers): identify them, report them 
properly, eventually fix them and apply the patches. If by looking at the code 
and the Launchpad bug report system and code history you feel you'll be able to 
do that, then go v6 without a doubt, you will win time and get a much better 
system with better support in the close future.

If on the contrary you don't feel at ease installing OpenERP with bzr, 
understanding the code, using Linux, doing bzr pull, migrating your database, 
then avoid taking that risk. Still bare in mind that if you go v5, migrating to 
v6 while in production will take you time and/or money. This is easier than is 
has been in the past, but still not something trivial like migrating a website.

If you have good IT skills but lack of OpenERP/Python/open source knowledge, 
may be taking a technical course at OpenERP S.A or some integrator might bridge 
the gap and allow you to go V6.
