Cheri--

Don't just think about student journals--the journal Psychological Reports
takes a lot of very short, solid but easily-done pieces. I often encourage
students to submit there. 

Conferences are also good, of course. By my lights, APA is *way* too big
and unmanageable, but local conferences can be very fun and valuable.
