You don't say what equipment you will have available.  If you
have access to computers, then there is much on-line stuff ... go
to www.uwinnipeg.ca/~psych and follow the "Psychology as
Science" link to access some demos.  On a local network, it is
also possible to run something like Sniffy to illustrate
learning.
