For a long time we kept the default queuelifetime of 7 days. A few months ago I was asked to shorten it, which I did to 1 day. Now someone says it's important to know if an email went through or not within an hour. Are there any pros/cons to shortening it to 1 hour?

1 hour is pretty extreme. I use queuelifetime when I'm cleaning out a large queue.. I'll set it to 10 minutes. But for normal usage, if you don't want to keep mail for 7 days, I'd try 2 or 3 days. The point is to allow for network or host problems to get resolved before bouncing the message. Setting it to 1 hour will likely defeat that goal.
