On the Tomcat Developers list there is at the moment a voting in progress wether 5.5.12 should be considered stable. All the votes I've seen were "stable - no major issues". So chances are 5.5.12 will become the official stable release of the 5.5.x branch in the next few days. BTW: I have found 5.5.12 pretty stable myself.
