I think you can ignore that message. The binary package 'ubuntu-themes' doesn't really exist as it is replaced by 'light-themes'.
That said, the file you said you changed (/usr/share/themes/Ambiance/gtk-2.0/gtkrc) belongs to the light-themes package. Please try: 1. Forcefully reinstalling that package: sudo apt-get install --reinstall light-themes 2. Reboot 3.
