This started happening when I did a fresh install of 11.10, and is not a hardware fault, as I have reverted back to 11.04 where it works fine. This issue appears after a fresh install with no conflicting software, and also happened when I was using a Microsoft LiveChat 3000 Headset previously, so seems to be an issue with Alsa or Pulse?
