You can easily remove them.  They're just tags.

No, it's one setting that can be set from either the Touch or from the
server.  And yes, it's turned off by default.

That's an odd conclusion to come to after if you understand the above. 
I seldom use it myself, except occasionally for background listening,
but I still take the time to apply the tags to all albums in my
library.  Doesn't hurt anything and I won't have to do it in the future
if I decide to use it more often.
