Because you are at risk of having a system that doesn't work.
The Squeezebox relies on having a firmware version that fits the server
it's running against so if you switch between servers you need to
update.
There could be changes to the server that mean your old firmware
doesn't work with the new server or the other way around.

But this is an entirely different issue than the one mentioned in this
thread. This is about the installation of nightly firmware builds.
