Are you using the Touch's built-in server (TinySBS) or an external SBS running on a pc or NAS? If the latter, then you should be able to find the email address in the SBS web ui under Settings > mysqueezebox.com.
For cloning settings across players you can look at peterw's SettingsManager plugin (http://www.tux.org/~peterw/slim/SettingsManager.html).
