With the Touch you can either run 'SBS' (http://wiki.slimdevices.com/index.php/Squeezebox_Server) from a computer, which is the best solution, or you can run a stripped-down version of SBS, called 'TinySC' (http://wiki.slimdevices.com/index.php/TinySC) on your Touch.
If you run TinySC, you just plug your USB hard drive directly into the Touch. If you have the opportunity to run SBS on a computer, go for that.
