If you are talking about something like Dolby Digital or DTS then the Touch cannot do that. It sends out standard two channel PCM S/PDIF.
There is a way to fake this, you can get DTS or Dolby Digital multi-channel files encoded as standard two channel WAV files, these will play on the Touch as long as the volume control is set to 100%.
