One possible setup for you, will give you the flexibility you want, but requires you to buy two SB Touch units:
Room 1: Touch + active speakers. Room 2: Touch + active speakers. This will allow you to sync the squeezeboxes to play the same music in both rooms, or to not sync them to play different music (or having one stay quiet).
