"protected" AAC files from itunes will not play on a TOUCH (but will
play on ipods, ipads, iphones, etc.).  I don't think itunes sells
protected files anymore, but you could still have some older ones.  In
itunes, right click on the column headings and tick "kind" to show as a
column.  Then look at some of these files that won't play. Do they say
"protected" in the KIND column (note this is differerent from
"purchased" in the kind column).

Regarding tagging all sorts of files (mp3, aac, flac, etc.), file type,
etc., I find mp3tag to be an excellent, powerful tool.
