DocBook is quite complex and hence writing your own comprehensive
stylesheets would be a non-trivial task. Perhaps Simplified DocBook
would be better suited?

If you took things further and took a very small subset of the DocBook
elements, writing the stylesheets and a wiki syntax converter would be
trivial. However, you would no longer be using DocBook and you would
have to be careful that your DocBook tool chain was not effected by
your choices.
