The regulator is rated at 1 amp, and with the v2.0 boards you can probably draw that much safely (they've got heavier copper and thermal vias to spread heat better) but you'll need to bypass the PTC fuse that will otherwise limit it to around 400 mA, not quite enough to run the nuvi when it wants to charge the battery.
