I'm not able to find that variable (tramp-methods). I'm using the
default tramp with emacs 23.2
INSIDE_EMACS=23.2.1,tramp:2.1.18-23.2
Should I be using latest tramp version to be able to add new tramp method.

Check variable `tramp-methods'. There is a "su" entry, which you might
duplicate, replacing "su" by "ksu". After you have restarted Emacs, ksu
shall work for you.
I believe it is a good idea to support ksu (we do it already with
krlogin). I'll add it to Tramp next days.
