We don't have a concept of hiding languages.  You can limit the view by
preventing people from viewing a language.

Yes.  You can set administrators privileges at either language, project or
translation project (language x on project y).  Check our the Permissions
tab.

In your settings folder look for PODIRECTORY.  Until they are synced back
to disk they are stored in the database.

You can find outstanding work when viewing the UI, there are no automatic
reports that will run to report regularly on that data.
